As its new Horizons restaurant is fitted out Clearwater Bay Golf and Country Club has named a new Director of F&B, Peter Downie said.
Peter, General Manager and Director of Golf, said Edward Read will be in charge of food and beverage at all three clubhouses at Clearwater Bay, including the new Horizons. This restaurant will have one of the most spectacular locations in Hong Kong. It is being built on the roof of the golf clubhouse which is itself high on a hill overlooking the links and sea.
Horizons will have floor to ceiling glass walls and 360-degree views.
Edward said Horizons’ fit-out is expected to be completed in July with the restaurant opening later that month. The adjacent bar will be ready for thirsty golfers just off the greens about a month later. It will be a real golfers’ establishment: they will be able to pad around still with spikes on.
Edward has moved to the CWB Club from Aberdeen Marina Club where he was restaurant manager. A Brit, he arrived in Hong Kong in 1986 as a child. He did a hotel management degree in the UK then joined the Ritz-Carlton as a youngster on the bottom rung, waiter. From there he has worked his way up at Ritz-Carlton’s Wicklow, Ireland, resort, Swire’s East Hotel, Ritz-Carlton at the ICC and then the Aberdeen Marina.
Edward said the opening of Horizons is quite a challenge and he will ensure there will be special new dishes and cocktails.
