Poon Wai Ling leads team dedicated to delivering culinary experience at The Square

Sai Kung’s relatively new restaurant The Square offers a full menu of vegan and meat dishes that will  tempt food lovers. Signature dishes: Slow-Cooked Beef Cheek with red wine mushroom sauce, baby carrots, green peas and mashed potatoes; Singaling’s Vegan Burger with tomato jam, caramelised onion, bacon and cheese; Meat Lover’s Pizza with sausage, bacon and beef mince; Half Peruvian Aji-Panca Chicken with coriander rice, baby carrots, avocado and salsa; and The Square’s Lobster Sandwich with mayonnaise, capers, parsley and red onion.

The Square’s Set Lunch at $110 and up is a bargain: Soup of the day or daily salad followed by mains Spaghetti Pesto all Genovese, or Beef Quesadillas, or New Zealand Ribeye Steak, and more, then coffee, tea, soft drink or dessert of the day.

SAI KUNG BUZZ asked Wai Ling what is the concept of The Square.  “For many of us who’ve raised our families in Sai Kung, the Sai Kung Square has always been home to so many people. And being able to set up shop here has been so rewarding because it feels like coming home. And for those who’ve known me over the years know that I have always been a hostess at heart. From hotpots to Sunday roasts, to barbecues with friends, I’ve always been passionate about making great food for the people I love. My work also took me to all different parts of the world and being able to bring back those cuisines to share was a really special thing for me. The concept behind the Square was to bring great quality food drawing inspiration from all over the world, at a reasonable price, and most importantly, with a team that will make you feel right at home.”

The Square’s interior design was created with the help of a Danish architect. Wai Ling said, “We wanted to pay homage to the town we are fortunate to call home hence a very natural feel to the restaurant’s design. . . we brought in lush greenery, a beautiful mural, and a warm and homely feel to the restaurant.”

The upstairs floor has been  fitted out for parties of as many as 30 people. “We’ve also become adept at hosting parties and I couldn’t be happier about it. With our big wooden round-table and surrounding space, it brings back memories of my own parties and I love working with our guests to make the perfect party package with bespoke menus and drinks.”

Wai Ling  says she is proud to have created a team who are passionate about food and service. “Thus far, we’ve been extremely fortunate with our team who see our vision and can bring it to life. In the kitchen, we have our head chef Dino and his amazing team who helped to transform our menu and are always experimenting with new recipes for Sai Kung’s restaurant scene. On the floor, you’ll see a bunch of smiley faces (typically with me standing up front to greet) who are always experimenting too with how to elevate our service and our drinks. If you come on the weekend you’ll likely also spot my daughter, Seren, running around the floor or working on our latest seasonal promotion (Hint: spot our latest Frozen Aperol Slushie in the days to come).”

The Square, Wai Ling says, is well positioned in a competitive field. “We’re spoilt for choice for good food options in Sai Kung for sure, but what makes us stand out, I feel, is that we have a little something for everyone. The kitchen staff works tirelessly to ensure we are at the top of our game in terms of food quality, striking a balance between a hearty comfort meal and a zingy experimental treat. In every dish you try, you can see the heart and soul of me and our whole team who are a friendly bunch and always happy to help. We are always here to cater to dietary requirements too. Raising two daughters with more restrictions and intolerances than I can count, I know the feeling of ordering the same stuff over and over with no options. So we are never afraid to change things up, we will always try our best to serve you. And last of all, a generous pour and a strong cocktail always help too.”
