Families churn out batches of bars at new Kwun Tong facility

Sai Kung entrepreneur Priscilla Soligo has started production at a new chocolate factory in Kwun Tong.

The 1400sf site at Hewlett Centre is owned by the Soligo and Whitfield families and operated by four relatives with two staff.  Priscilla is the sister of Rachel Whitfield, both have two children and Cathay pilot husbands. The families live close at Pak Sha Wan.

Priscilla, who also runs Rawthentic Foods, said, “Having chocolate that the whole family can enjoy is why I started this company. I simply couldn’t find anyone making allergen friendly chocolate without the dairy, refined sugar, soy and junk, much less a small batch maker producing fresh chocolate from scratch.”

The factory uses large stone grinders and polycarbonate moulds to produce “cold processed bean to bar low glycemic fresh chocolate” under the brand, Raizthebar.  Each batch takes four days, Priscilla said.  

Packages of Raizthebar chocolates contain 12 bars of 52g and can be bought online for $780.

Priscilla said they refuse to use importers and visit farms in Indonesia in the interest of purity and ethics.  Raizthebar can be seen at most Sai Kung Markets. Distribution to restaurants and retailers is underway at Hong kong Island, Discovery Bay and Sai Kung. Locally if you’d like to try the chocolate you can find it at The Bottle Shop, 114 Man Nin St, retailing at $70 a bar.
