Raymond closes cafe to focus on only French game in town

Chef Raymond Vachaudez has closed Cafe Bon Bon to concentrate on his 30-seat French private dining room on Po Tung Rd.

din1He calls what is now the only French restaurant in town Chez Raymond de Paris. It’s at 183D Po Tung Rd, a couple of doors on from Basecamp.

Raymond said rent at Cafe Bon Bon got too high so he exited the site, now a Chinese restaurant called Trendsetters.   He has refreshed the decor at Chez Raymond with new lighting and signage, but kept it simple bistro-style: white walls and furnishings and blackboards. The only colour is provided by burgundy napkins “and the guests themselves”.

din2.jpgRaymond runs the restaurant with his wife Helen, a Hong Kong Chinese lass he met four years ago. They live at Tang Cheng Village behind their restaurant.  The couple operate Chez Raymond with Aussie Head Chef Chris Martin and two waiters.  

The concept is traditional southwest French.  All food is French except for Australian beef and New Zealand lamb and local vegetables. The wine is entirely French too although Raymond does stock two Italian labels, Santome Raboso and Barrolo.

The signature dishes picked out by Chris were scallops cooked in apple brandy, duck confit with potato confit and salad, dijon-crusted lamb rack with ratatouille and fig glaze, and creme brulee.

The four-course menu is $490 and two-courses $290.
